Overnight Oats: Summer edition

Summer is definitely on its way. The temperature is rising, the days are longer and there is an abundance of fresh fruit and berries available for us to enjoy. But is there a simple way to get a delicious burst of summer for breakfast? I mean, who has the time to sit down and enjoy an entire bowl of fruit or juicy mango – definitely not me. So do you want to know my secret for having a little taste of summer every morning? I add tropical flavours to my overnight oats and ta da – I’ve got a refreshing, summer treat that keeps me going right up until lunchtime (promise).

Summer-kissed overnight oats


  • 1¼ cup of rolled oats
  • 1 scoop of vanilla whey protein powder
  • Sprinkle of cinnamon
  • 2 cups of coconut or almond milk
  • Diced summer fruits (fresh or frozen)
  • Optional: 2 teaspoons of LSA mix or flaxseeds


1. Place 1 ¼ cup of rolled oats, scoop of whey powder, cinnamon and 2 cups of coconut or almond milk in a bowl and stir. Add in LSA mix or flaxseeds if desired and stir until combined. Cover mixture and place in the fridge overnight.

2. In the morning, take the mixture out of the fridge & give it a quick stir.

3. Cut up your fresh summer fruits (mango, banana, watermelon, kiwifruit) or add-in a cup of the frozen variety and place on top of your mixture. Enjoy!
